Y’all we are almost rounding out the last month of summer, how crazy is that?! I’d be lying if I said I wasn’t the sliiiightest bit excited for it to cool down a bit and get fall in swing. But for now, in honor of the dwindling days, I wanted to share one of my all-time favorite recipes using some of summer’s best veggies.
This is something I almost always have the ingredients to whip up, as I have most of the veggies and herbs in my garden and onions and gnocchi are pretty long lasting in the pantry. I can’t decide what I love most about this recipe- the funky gnocchi texture, the light sauce or the fact that it’s packed with veggies but doesn’t taste a bit like it!
